Lemongrass

1 teaspoon
Shallot
2 teaspoons
Cumin seed
1 teaspoon
Coriander seed
1 teaspoon
White peppercorn
0.5 teaspoons
Shrimp paste
1 teaspoon
Salt
1 teaspoon

steps

1.Pound the white peppercorn, roasted cumin seeds and roasted coriander seeds in a mortar, pound well.
2.Add all herbs: lemongrass, galangal, kaffir lime skin zest, and coriander root
3.Add juicy ingredients: garlic and shallots, chopped chilies (let them soak in warm water for 5-10mins then slice) and salt. Shrimp paste pound until mixed.
