1.Dice 1 red onion and soak in cold water for 15 minutes to cut the bite and make it easier to eat.
2.Dice 4 Persian cucumbers into small cubes and quarter about a pint of cherry tomatoes.
3.Finely chop a small handful each of dill and mint.
4.Mix cucumbers, tomatoes, onion, herbs, zest of 1 lemon, juice of half a lemon, 2.5 tbsp olive oil, 1 tbsp sumac, and a pinch of salt.
5.Taste and adjust, adding more salt if desired.
6.Spread cottage cheese on a plate, top with the salad, crumble feta, and finish with a dusting of sumac, Aleppo pepper, and more fresh herbs.
